Try not to handle the butter too much (the heat from your hands will soften it) - use quick movements and don't worry if some larger chunks of butter still remain. * Add the lemon juice and the water slowly as the food processor runs on low, just until the dough comes together and pulls away from the sides of the bowl. Depending on the weather and even on the brand of flour, I use anywhere between 5 and 8 tablespoons of water.If making by hand, use your hands to form the dough gently and quickly using just enough water for the dough to come together. * Dump the rough dough onto the counter and divide the dough into two disc shapes and wrap each one separately in plastic wrap, placing it in the fridge to chill for 45 minutes or overnight. For the filling: * Add the raspberries to a bowl, along with the cornstarch, sugar, salt and lemon juice. Toss just until combined. If using frozen raspberries, make the filling with the raspberries as they're frozen (do not defrost the raspberries first). * Set the filling aside while you prepare the crust for baking. This easy raspberry pie recipe is an old family recipe. We use fozen berries for this pie but you could use fresh. If you use fresh berries then you may have to adjust the amount of cornstarch you need. This is the link to my favorite pie crust recipe: 🤍 2lbs frozen raspberries ½ cup sugar ¼ TSP salt 2 TBSP unsalted butter 1-2 TSP vanilla (the more the better!) 5 TBSP cornstarch ¼ cup water 1 unbaked 9” pie crust Heat oven to 375F. Put frozen berries in a pot and add sugar and salt. Cook on medium heat until berries thaw and start to get hot and juicy. Add butter. Continue cooking until berries are nice and hot and liquidy. It will look like a berry puree. Mix cornstarch with water and add to berries. Cook until nice and thick. Take off heat and add vanilla. Cool a bit. Make sure your pie crust is nice and cold and your oven is preheated. Pour berries into pie crust and put in oven. Cook for about 30 minutes (yours might take more or less time, depends on your crust). The crust will be nicely browned and berries will look set and slightly dry when it’s done. Let cool then place in fridge to cool completely. Serve with whipped cream or ice cream. Enjoy! View FULL Step-by-Step recipe here: 🤍 Ingredients: 4 1/2 cups fresh raspberries 1 cup granulated sugar 1 tbsp lemon juice pinch of salt 2 1/2 tbsp tapioca 1/2 tsp cinnamon 2 traditional pie crusts 1 tbsp unsalted butter (cold & cubed) 1 tbsp half and half Instructions: 1. Preheat the oven to 425F and place 1 pie crust into a 9 inch pie plate 2. In a large mixing bowl, combine the raspberries, sugar tapioca, lemon juice, cinnamon, and salt until well combined. Pour the raspberry filling into the pie crust and dot with filling. Cover the filling with the second pie crust and flute or crimp edge with a fork to seal. Brush the top with cream and sprinkle coarse sugar on top (optional). Cut several vents into the center of the pie to allow steam to escape. 3. Bake the pie for 15 minutes, then reduce the heat to 375F. Bake until the crust is golden brown and the filling is bubbling, about 20 minutes. 4. This is one of the best summer desserts! Raspberries and blackberries are sweet, tart, and tasty. If you want to make this for Thanksgiving, frozen berries work great! Get the printable recipe here: 🤍 in a new tab) ingredients: 2 prepared pie crusts (1 top, 1 bottom) 3 1/2 cups blackberries 3 1/2 cups raspberries 1 cup sugar (more according to taste) 2 1/2 tablespoons lemon juice 2 tablespoons cornstarch milk and coarse sugar for topping the crust instructions: 1. Prepare a pie plate with a pie crust. Place on a foil lined baking sheet. Preheat oven to 400 degrees. 2. Combine the berries and sugar in a large saucepan. Cook over medium heat until berries release their juices, about 5 minutes. Taste the filling and add more sugar if desired. 3. While the filling is heating, mix the cornstarch and lemon juice in a small bowl. Add it to the berry mixture and heat for 2-3 minutes more. 4. Pour filling into prepared pie dish and top with second crust. Brush with milk and sprinkle with sugar. 5. Bake at for 40-45 minutes, until pie is golden brown and filling is bubbling. If edges are overbrowning, cover them with a foil guard halfway through the baking time. 6. Allow pie to cool to room temperature on cooling rack, then cover and refrigerator for 4-24 hours. 7. 🤍 This step by step video will demonstrate how easy it is to make a pie from fresh blackberries, black raspberries or red raspberries. This is an easy to make pie recipe that only uses a few ingredients. We picked the wild raspberries to use in the pie or you can make the pie from frozen berries also. You may also find fresh berries at your local farmers market. Video transcript: Hi, Kristi at the Rada Kitchen. I just found out that we had wild black raspberries growing around the Rada plant here so I wanted to show how to make a Wild Black Raspberry Pie. I went out and I picked 5 cups of fresh black raspberries. You could also use blackberries or red raspberries and the pie could be made from frozen berries too. To the just washed berries add a cup and a fourth of sugar and a fourth cup of corn starch and a dash of salt. Then add two tablespoons of butter that has been softened. I am going to cut that up into pieces. Then you want to gently mix it until all the berries are coated. One trick I found, my hands got all purple from picking the raspberries so all I did was put white vinegar on my hands and it took the color right off. Once you have the sugar and cornstarch mixed in well with the berries pour it into an unbaked pie crust. I just made a video on how to make a made from scratch pie crust, so you will have to look that video up. I am using the Rada Pie Plate, its stoneware, you don't have to grease it and it's going to make that crust really flaky. Put the berries into the crust. Preheat the oven to 350 degrees. This is a simple pie crust, it's really easy to make. I like to roll it out on wax paper, as you can see it is really easy to place over the berries. Gently peel the wax paper off, then take a little bit of water and brush around the edge of the crust to seal it so you don't have juices running all over in your oven. Now this is a 9 inch pie plate and now I will roll the edges under. You might have to trim the crust if you have too much dough. You could make this into a lattice top pie too. I rolled that under and now I am going to use the pinch technique, pinch it and make sure you seal it all the way around. Or you could use a fork on the edge. Then take milk and a pastry brush and lightly coat the top of the pie, then take sugar and sprinkle it over the top. Now the most important thing is to make slits on the top so it doesn't over bake. I like to do 1 long slit, a medium and a small. The pie is ready to be put into a 350 degree preheated oven for 1 hour then we will come back and see how delicious it looks. I just took the Fresh Black Raspberry Pie out of the oven, it's hot and I am going to let it cool down and later I will serve it with the Rada Pie Server. LeGourmetTV Is Now Glen & Friends Cooking! Pie! No need to say anything else... Pie! Ingredients: For the Crust: 2 1/2 cups (300 g) all-purpose flour 1 tbsp (12 g) granulated sugar 1 tsp (5 g) salt 1 cup (227 g) unsalted butter, Cubed & Frozen 1/2 3/4 cup (125 175 mL) ice water For the filling: ⅓ cup (75 mL) all-purpose flour, plus more for dusting 4 cups (1L) rhubarb, cut into ½" pieces 2 cups (500 mL) raspberries 1¼ cups (300 mL) sugar Freshly squeezed juice of ½ lemon 1 Tbsp (15 mL) cold butter, cut into small pieces 1 large egg, lightly beaten 2 Tbsp (30 mL) 35% cream Method: Preheat oven to 350ºF (180ºC). Place the flour, sugar, salt, and frozen cubed butter in a food processor. Pulse the mixture just until the butter & flour look like fine bread crumbs. Turn the processor to on, and slowly drizzle in the ice water until a ball of dough starts to appear in the mixer bowl. Stop the processor - you don't want to overwork the dough. Turn the mix out onto the countertop and form into a ball. Divide the dough in half, and wrap each with plastic wrap. Refrigerate at least one hour before rolling out. On a lightly floured surface, roll out one half of dough for bottom crust. Fit into an 10" deep dish pie plate. Trim pastry using a sharp paring knife, and chill. Combine rhubarb, raspberries, sugar, flour, and lemon juice in a large bowl. Mix gently so you don't break up the raspberries. Pour into pie shell, and dot with butter. In a small bowl whisk together the egg and heavy cream. Roll out remaining piece of dough and cut it into 1" wide strips. Egg wash the edge of the bottom crust & weave strips together over the filling, placing extra strips around the edge. Press around edge with tines of a fork to seal well. Brush lattice and all pastry edges with egg wash and sprinkle the top with sugar. Place the pie on a baking sheet, because it will bubble over. Bake for 1¼ to ½ hours, or until pastry is golden brown and juices in centre of pie are bubbling. Transfer to a wire rack to cool. Grind the coconut cookies in a food processor. Add the melted butter and mix everything together until you get a cohesive mixture. Press the cookie dough into a baking dish lined with parchment paper. Refrigerate for 30-60 minutes, or if you want to quicken the process, you can place it in the freezer. Heat the heavy cream and vanilla sugar in a saucepan until it's almost boiling. Remove it from the heat and add the pieces of white chocolate. Let it sit for 1 minute, then stir until it becomes a smooth. Add the grated coconut and mix until combined. Pour the coconut mixture into the baking dish and spread it evenly. Garnish with fresh raspberries and sprinkle a bit of grated coconut on top. Allow the pie to set in the refrigerator for at least 4 hours. TIPS You can substitute vanilla sugar with vanilla extract. Replace the coconut crust with cookies of your choice. Choose the fruit of your liking. You can also use a baking dish. It's optional to omit the coconut.
