This sauce is awesome because at its base, it can be used on so many different dishes, from enchiladas to tamales to menudo and so much more. All you got to do is start with this base, and then you can tweak it in any direction, probably as many different sauces as there are chilies, and that's not even taking into account that every single house is going to do it a little bit different. So whether you're in Texas, New Mexico, Mexico, or along the frontera or anywhere in the USA, remember my advice, what Arnie takes always says, ain't no right way, ain't no wrong way to make chili sauce, and don't let nobody tell you you can't do it the way you like it. Maybe what your grandma taught your mom, what my grandma taught my mom and my mom taught me may not be exactly the same, even if they're similar, but of course, my grandma's is better than yours. Just kidding! Don't get mad! Let me just cover real quickly the couple of the different chiles I have. Now, the package here says cascabel or guajillo. It doesn't mean they're the same thing because they're not, but it means you might get one or the other in this package or possibly both. We also have some ancho chile, and we also have some pasilla chile. And I also have some chile de arbol down here. We use that one in our red chili sauce just to give it a little hint of heat and a little more complex flavor. All right, so in the recipe we're going to use 15 guajillo/cascabel chiles, a couple of ancho chiles, and probably about four or five of the chile de arbol, a whole onion, and six cloves of garlic. Chili Garlic Sauce Cook time: 15 minutes Prep time: 5 minutes RECIPE: 100g Red Chili 1cup Dry Chili 3bulb Garlic 2tsp Salt 2tsp Brown Sugar 2TBSP Soy Sauce 2 1/2cup Olive Oil *Fry garlic until it changes color to yellow, and then add your fresh chili. *Cook it for 10 minutes in a low heat. *Add dry chili and brown sugar continue cooking for another 5 minutes. *Turn off the heat and add the soy sauce. *Let it cool down before putting it inside the container. TIPS: *When chopping the chili you should wear a plastic gloves, so that the heat won't transfer to your hands. *Fry garlic until it changes the color to yellow, not brown. This is to avoid “raw taste” of the vinegar. After 3 minutes, stir and cook for another 20 minutes. Once the chili and garlic is cooked, remove from heat and let it cool completely. Put in a clean dry jar with lid. The first is a fluffy Lebanese garlic sauce called Toum that is perfect for dipping, and the second is a spicy chilli sauce filled with loads of fresh chillies. Peel your garlic and slice your cloves in half, remove the garlic germ from the center of each clove, you should have 150g after degerming your garlic 2. Juice about 2 lemons and strain the juice to remove all pulp and seeds 3. Place your garlic and salt in your food processor and process until finely minced. This should take about 2 minutes, remember to scrape the sides of the food processor bowl every 15 seconds. 4. When finely minced add a teaspoon of lemon juice and process again for a minute, scraping the bowl every 15 seconds 5. Add one more teaspoon of lemon and process until a fluffy and fine paste forms 6. When the garlic has fluffed up, start your food processor, and slowly drizzle in 1/2 a cup of the oil. You should drizzle it in a flow as thin as a thread, and do not stop the machine until the recipe is completed. As you drizzle the oil the garlic will emulsify into a sauce, you should take about 2 minutes with the first half cup. If your machine has a emulsification resevoir, use it to slowly trickle the oil in. Do not proceed with the recipe until the first half cup has emulsified and thickened 7. Once the first half cup has emulsified you should slowly drizzle in a tablespoon of lemon juice 8. Alternate drizzling in 1/2 a cup of oil and 1 tablespoon of lemon juice until both have finished 9. Once completed, place the sauce in a container and cover with a paper towel. Let it rest overnight before serving Chilli sauce ingredients: 100g (3.5 oz) Habaneros 200g (7 oz) Cayenne Peppers 300g (10.5 oz) Fresh Paprikas 3-4 Cloves of garlic 1 Brown Onion 3 Tbsp Olive oil 3 Tbsp Lemon juice 1 Tbsp White vinegar 1 Tbsp Sugar 1-2 Tbsp Cayenne Pepper (optional and should only be used if your sauce isn't spicy enough) 2 Tsp Garlic powder 1 Tsp Fresh ginger 1 Tsp Ground cumin 1 Tsp Ground coriander 1 Tsp Salt 1/4 Tsp Smoked Paprika Chilli sauce directions: 1. Slice the top off of each chilli and remove the pith and seeds 2. Peel your ginger and slice into thin pieces 3. Peel your onion and slice into quarters 4. Place the peppers, onion, ginger and garlic on a baking sheet and drizzle on 1 Tbsp of olive oil as well as 1 Tsp of salt 5. Bake in a 180c or 350f oven for 20-30 minutes until the chillies are cooked and slightly browned. Remove and let cool before moving forward 6. Place all the baked ingredients into a food processor and process into a fine paste 7. Add the remaining ingredients apart from the lemon juice and cayenne pepper, then blend until well mixed and a thick chilli sauce has formed 8. Taste the sauce and see if it's spicy enough, if not, add the cayenne pepper and blend once more 9. Add the lemon juice and mix in 10. Place the chilli sauce in a container and refrigerate overnight, the flavors will develop over the next 24 hours Tips and tricks: • You can make your own DIY emulsification reservoir by making a hole in the bottom of a plastic cup • Chilling your oil in the fridge for a couple of hours will help the emulsification setup easier • If your garlic sauce splits or does not emulsify, you can fix it with an egg white. Sweet Chili Sauce Ingredients * 4 Fresno chilies(cut into chunks) * 2-3 Thai chilies * 6-8 cloves of garlic * 1 cup sugar * 1/3 cup water * 3/4 cup vinegar * 1 tsp salt * 1 tbsp fish sauce * 1 tbsp cornstarch * 1 tbsp water Instructions 1. In a food processor blend the Fresno chilies, Thai chilies, and garlic. 2. Heat together the sugar and water until the sugar is completely dissolved. 3. Add the vinegar and blended chilies. 4. Season with salt and fish sauce and simmer for 5 minutes. 5. Mix together cornstarch and water and pour that into the sauce to thicken. 6. Start by washing the chillies well, then dry them and slice into 1cm slices (this is going to get blended, so don't stress too much about the consistency) 2. Place the sliced chillies into a preserving jar. 3. In a separate container, dissolve the salt into the water. Once the salt is completely dissolved, pour it over the sliced chillies. 4. Now you need to hold the chillies down so they are completely covered. I used a vac pack bag with some water. You could also use a small saucer. 5. Place a lid on loosely, so the gas can escape. 6. Leave this to ferment for 1-3 weeks, depending on how hot your kitchen is. It's summer here in Queensland, so only took a week for me but if you're somewhere colder, you might want to leave this for 3 weeks. There's no right or wrong amount of time here, use your intuition and go with what you think works. But you're looking for the chillies to start being quite active with bubbles forming and the water starting to turn cloudy. 7. Once you're finished with the fermentation stage, drain the chillies from the brine and place them into a high-speed blender. 8. Blend on high with the vinegar until you have a smooth sauce. With the blender still running, add your xanthan gum and continue to blend for 1 more minute. 9. Store this in the fridge for up to six months, and to be honest, you will probably have finished it all well before it goes off.

Zutaten (für ca. 4. Portionen) - 100g Orangene Chili - 6 Tomaten - 1 Knoblauchknolle - 2 Zwiebeln - Ca. 30 ml Olivenöl - Ca. 50ml Milch - 1.5 TL Salz, 1/2 Pfeffer - 50 ml Kokossnussmilch - Cashewkerne - 500g Hähnchenbrust Filet (alternativ, Tofu, Süssekartoffeln, Rind was auch immer du magst) Zubereitung: 1. Chilis, Tomaten, Knoblauch und Zwiebeln in einer Auflaufform zusammen mit Olivenöl bei 200 Grad ober/unter Hitze im Backofen backen 2. Wenn das Gemüse schön weich geworden ist und karamellisiert ist (leicht bräunlich) ist es perfekt 3. Das Gemüse für ca. 10 Minuten abkühlen lassen und dann alles in einen Mixer kippen. Dazu noch Salz, Pfeffer und ca. 50 ml Milch und dann alles schön zu einer sosse zermixen 4. Die sosse in eine Pfanne kippen und aufkochen. Darin dass Hähnchenbrustfilett für ca. 15-20 Minuten auf niedriger Hitze köcheln lassen 5. Dann die Kokossnussmilch dazukippen und alles nochmal für ca. 10 Minuten köcheln lassen 6. Anschliessen Mit Reis oder Bulgur servieren
