Claire Saffitz Blood Orange Pudding Cake Recipe | Dessert Person I’ve been captivated by the idea of a pudding cake ever since I saw a recipe for one by the pastry chef Kristen Murray of Maurice luncheonette in Portland, Oregon, many years ago. Prepared more like a soufflé than a cake, it’s a mixture of citrus juice, dairy, egg yolks, and flour, lightened with beaten egg whites and baked in a water bath. As it bakes, the egg whites rise to the surface and the batter miraculously separates into a light sponge on top and a curdlike layer on the bottom. The typical all-lemon version is lovely, but here I use blood oranges for their vibrant color and sweet-tart flavor. You can leave the cake in the baking dish for serving, but I prefer to turn it out so the pudding layer is on top. Add sugar, water and vinegar in a pan and heat without stirring till a nice amber coloured caramel is achieved. 2. Carefully pour the caramel into a ramekin. 3. While the caramel cools, combine milk, sugar and custard powder in a saucepan set over medium heat and whisk continuously so no lumps form. Continue cooking the custard and remove from heat once it starts to thicken. 4. Pour the custard on top of the caramel and let it chill in the refrigerator for at least 4 hours or until the pudding sets completely. 5. Ingredients cake - 225g whole Medjool dates, pitted - 175ml boiling water - 1 tsp vanilla extract - 175g plain flour - 1 tsp bicarbonate of soda - 1 tsp baking powder - 2 eggs - 85g softened butter - 140g demerara sugar - 2 tbsp black treacle - 100ml milk Method 1. Start by pouring the boiling water over the dates and set aside to soften for 10-15 minutes. 2. Next, cream together the softened butter and sugar (note this should almost double in size but probably won't be smooth because of the coarse sugar). 3. Now, beat in the two eggs, treacle, and vanilla extract. 4. Whisk in the milk, followed by the bicarb soda and baking powder. 5. Slowly mix in the flour but be careful not to overmix it. 6. Mash your softened dates in the water and fold through the cake batter. 7. Grease ramekins with softened butter, dust with flour, and fill them 2/3 of the way with batter. 8. Bake in 160°C oven for 20-25 minutes or until a skewer comes out clean. Ingredients sauce - 175g demerara sugar - 50g butter - 225ml cream - 2 tbsp black treacle Method 1. Add your butter, sugar, treacle, and half the cream in a saucepan and place over medium heat, whisking until you have a smooth consistency - cook this for 5-6 minutes. 2. Remove from the heat and whisk in the remaining cream. 3. Serve over top of the hot sticky toffee pudding with your choice of ice cream or custard.

おうちおやつに人気のカスタードプリンケーキのレシピです。 生クリームを使わないで、牛乳で作るのでしっかり固めのプリンです。カロリー低めなのでたっぷり食べれますね。笑 プリン液に卵黄を追加することで、なめらかで濃厚な口当たりになります。 余った卵白をスポンジケーキに使っています。卵白が多いので泡立てやすいし、しっかり高さのあるスポンジケーキに仕上がりますよ。 ▷材料(7×16cmパウンド型1台分): ■キャラメル 水 大さじ1 グラニュー糖 50g 水 大さじ1 ■カスタードプリン 全卵 3個 卵黄 1個 グラニュー糖 60g 牛乳 350ml バニラエクストラクト 小さじ1 ■スポンジケーキ 卵白 2個 グラニュー糖 40g 卵黄 1個 薄力粉 35g ▷作り方: 1.キャラメルを作る。小鍋に水、グラニュー糖を入れて中火にかけ、キャラメル色になるまで加熱する。 2.火から下ろし、水を加えてキャラメルを緩める。キャラメルを型に入れる。 3.プリン液を作る。キャラメルを作った鍋に牛乳を入れて、キャラメルが溶けるまで温める。 4.全卵3個に卵黄1個を足して白身の塊がなくなるまで混ぜる。グラニュー糖も加えて混ぜる。 5.温めた牛乳を加えて混ぜる。 6.スポンジケーキを作る。卵白2個にグラニュー糖を2回に分けて加えメレンゲを作る。 7.卵黄1個を加えて均一になるまで低速で混ぜる。 8.薄力粉をふるって加え、粉っぽさがなくなるまで混ぜる。 9.プリン液を一度濾し、キャラメルを入れた容器に入れる。 10.スポンジケーキをプリン液の上に乗せる。バッドにお湯を張る。 160℃に予熱したオーブンで20分焼く。 アルミホイルをかぶせて、150℃で30分湯煎焼きする。 11.粗熱を取り、冷蔵庫で冷やす。 ▷instagram: 🤍 もし私のレシピでお菓子を作ってくださったときは、 #hidamaricooking をつけて投稿してもらえると嬉しいです ▷HidaMari Cookingについて: 2017年からお菓子を作り始めました。 ひだまりクッキングという名前は、動画を見てくれた人が ひだまりに包まれているような温かい気持ちになってもらえたら嬉しいなと思ってつけました。 いつも素敵なコメントありがとうございます。 あなたの一日が素敵な日になりますように。 #カスタードプリン #プリンケーキ

Hungarian Rice Pudding Cake (Rizskoch) is a simple but delicious dessert, based on a rice pudding, but adding egg yolks and beaten egg whites to it, it become almost a souffle. Almost... I would call it a cake instead as it's baked in a pan in the oven, then cut it individual squares. I love to eat it with some raspberry cordial (as I had it in my childhood), but it's usually served with smooth, homemade apricot jam. Ingredients (for 6-8 portions): 350 grams (0,8 lbs) short grain rice 500 ml (about 2 cups) water 500 ml (about 2 cups) milk a pinch of salt 100 grams (3.5 oz) butter at room temperature (plus some for greasing the pan) 150 grams (5.3 oz) sugar 1 pack (about 2 tbsp) vanilla sugar 4 eggs (separated) zest of half of a lemon 1-2 tbsp fine breadcrumbs (for dusting the pan) icing sugar raspberry cordial /or apricot jam 1. Put the washed and drained rice into a pot, pour the water over, add a pinch of salt and cover the pot. Cook on medium-low heat, (stirring sometime) until all the water has absorbed. 2. Now, pour in the milk, stir and cover the pot. Cook on very low heat (stirring now and then) until the rice is tender, and has absorbed the milk. (it takes about 20-30 minutes, depending on the rice you use) 3. When it's done, remove from the heat and let it cool uncovered 4. Meanwhile separate the eggs. 5. Add sugar, vanilla sugar and butter (at room temperature) to the egg yolks and stir well until you've got a smooth, creamy and fluffy texture. Set aside. 6. Beat the egg whites until they form soft peaks. 7. Now, add the egg yolk-mixture to the cooled rice, and gently mix them together until well combined. 8. Add the egg whites and gently fold it into the rice mixture (be careful not to break the airy texture of the egg whites!) 9. Grate in the zest of half of a lemon and stir gently. 10. Grease a baking pan (I used a 30x20x5 cm) with butter then dust it with a handful of fine breadcrumbs. 11. Pour in the rice mixture and bake in the preheated oven, at 180C (360F) for 35-40 minutes 12. When the top is nice golden brown, remove the pan from the oven. 13. Cut the cake into 6 or 8 squares and serve while it's still warm. 14. Sift some icing sugar over and pour 3-4 tablespoon of raspberry cordial on top. Ingredients: -1 liter milk -2 bars of chocolate -2 tsp agar agar -fruits -powdered sugar Instructions: Cut the chocolate and add into a pan. Melt the chocolate over low heat. Now add the milk and mix well. Add agar agar and bring to a boil for 1-2 minutes. Cut open the top of the milk pack. Now add the fruits and pour the mixture over it. Tap the container on the table a few times to avoid bubbles later. Put it in the fridge for a few hours and you're done.
