UBE BIKO (STICKY PURPLE RICE WITH COCONUT MILK AND CARAMEL) Prep time: 20 minutes Cooking time: 45 minutes Yields: Serves 8 3 cups glutinous rice flour 4 cups water pandan leaves 2 cans coconut milk 2 cups brown sugar 1 cup ube powder ube extract for deeper ube/purple color Place rice in a pot and using medium heat, cook for 10 minutes. Cover and adjust heat to low and cook between 5 to 7 minutes Turn off heat and set aside. Meanwhile, using another pot, combine coconut milk, ube powder, sugar and ube extract. Use medium heat and stir constantly for 10 minutes. Bubbles will form after 10 minutes, adjust heat to low and keep stirring for 5 minutes until thick. Slowly add rice. Continue to stir for 10 minutes until all combined and sticky. Brush a glass baking dish with coconut oil or melted butter. Add sticky rice. Flatten top using a spatula or a back of a spoon coated with cooking spray. Cool down. Sprinkle coconut curd/latik on top before serving. Coconut curd/latik Place 2 cans of coconut cream in a pot. Cook under low heat until curd is formed 🤍1 hour. Stir occasionally.

Purple Yam or Ube is a common staple in Filipino desserts, add it to the traditional Biko which only uses sugar and coconut milk mixture, and you'll have a fairly same decadent but new type of dessert. // I N G R E D I E N T S 3 CUPS OF GLUTINOUS RICE 1 CAN OF UBE FLAVORED CONDENSED MILK CHEESE COCONUT MILK BROWN SUGAR // I N S T R U C T I O N S: 1. Combine the sticky rice and water in a rice cooker and cook until the rice is ready. 2. Combine the coconut milk with brown sugar and Ube Flavored Condense Milk in a separate pot and cook in low heat until the texture becomes thick. Stir constantly. 3. Once the rice is cooked and the coconut milk-sugar- ube condense milk mixture is thick enough, add the cooked rice in the coconut milk, sugar and ube condense milk mixture then mix well. 4. Cook until mixture gets very sticky and pulls away from the skillet. It’s done when you barely can mix it and when it gets shimmery in appearance 4. Remove from heat and transfer to a prepared container lined with banana leaves, then allow to cool before serving .

For this I mixed some black rice with the glutinous rice to achieve the reddish, purple color. I normally avoid extracts with artificial food coloring. Natural color and flavor is always the best. We need at least an hour for this recipe. The longer we stir the rice cake, the stickier and better it gets. So, be patient, it's worth it. Also, you don't need an extra topping for this. Me, I just sprinkle it with some brown sugar. The 800 ml coconut milk we cooked in the beginning is more than enough to give this dessert a rich, yummy taste. Enjoy!
